While shrimp is the most commonly used seafood when preparing salads, this recipe calls for scallops, which are also a great source of protein at 21 grams per serving.

The recipe brings in the sweet flavor of pineapple with the tangy flavor of lime for a taste sensation that is unlike any other. The pineapple also contains important digestive enzymes, so this is a great salad for those who may often suffer from digestive issues.

The spinach it calls for boasts a number of nutrients including vitamin K, vitamin E, folate, iron, and calcium. Finally, the avocado rounds out the dish, adding some unsaturated fat content and even more vitamin E to help promote healthy skin, hair, and nails.

Note that you can adjust the amount of lime juice to taste if desired.

INGREDIENTS


  • 10 oz. scallops
  • ½ tbsp. red pepper and garlic spice
  • 4 slices pineapple
  • 4 cups spinach leaves
  • ¼ cup diced avocado
  • 2 tbsp. fresh lime juice
  • 1 tsp. olive oil

COOKING DIRECTIONS


1. Rub the red pepper and garlic spice into scallops and then place on a grill, grilling for 3 minutes per side.

2. Remove and cover to maintain heat.

3. Next, add pineapple to the grill and grill for 2 minutes per side.

4. Combine together the lime juice and olive oil.

5. Toss together the spinach, pineapple, scallops, and avocado.

6. Drizzle with lime juice mixture before serving.
