LEMON DILL SALMON

Few protein sources are as healthy as salmon is, making it a must-add to your meal plan. Salmon is rich in omega-3 fatty acids, which will help to combat insulin resistance, lowering your risk factor for diabetes.

In addition to that, it’ll also help increase brain health, boost your heart health, and may also help you better maintain your body weight.

You’ll also be coating the fish with some olive oil, well-known to further help improve heart health and reduce harmful cholesterol levels in the body.

The lemon in the recipe is also excellent for detoxification purposes and will help cleanse the body while keeping your pH level where it needs to be for optimal health.

This recipe adds the delicious flavor of dill to salmon in a fast and easy dish that you can make on any busy weeknight evening. Feel free to add any other vegetables in with the fish as desired.

INGREDIENTS

  • 3 tsp. of dill
  • 1 tsp. of salt and pepper
  • 1 tsp. of garlic powder
  • 1 tsp. of onion powder
  • 1 lemon sliced thinly
  • 2 tsp. of extra virgin olive oil
  • Parchment paper
  • 4 x 3oz pieces of wild salmon
  • 1 sliced onion
  • 4 cups pre-cooked wild rice
  • 4 cups steamed broccoli

DIRECTIONS

  1. Preheat the oven to 350 degrees F and cover the salmon in the oil.
  2. Next, sprinkle with spices on both sides and then place the lemon and onion slices on top.
  3. Cut out a large piece of parchment paper and wrap fish together, leaving just a small opening for the steam to escape.
  4. Place on a baking pan and cook for 20-25 minutes or until fish flakes easily.
  5. Serve alongside a bed of wild rice and some steamed vegetables of choice.
