Soups are relatively fast and easy to prepare and the best news is they can easily be frozen until later for a quick meal on the go.This soup brings together the high protein option of chicken with the higher carb option of chickpeas to give you the perfect combination of nutrition that will fuel your day. Chickpeas are also loaded with dietary fiber, so are an ideal option for keeping blood glucose levels stabilized and your hunger down.If you are looking to make this a lower carb dish, simply omit the added rice, half the amount of chickpeas, and add some additional vegetables such as sliced zucchini, mushrooms, or broccoli.Likewise, if you prefer to make it vegetarian, simply leave out the chicken breast and double the chickpea amount to bring the protein content up. INGREDIENTS 16oz of boneless chicken breast2 medium sized chopped carrots2 stalks of chopped celery1 ½ cups chickpeas1/2 cup of chopped onions4 cups of low sodium chicken broth1 cup of brown rice1 tablespoon of olive oil COOKING DIRECTIONS Begin by cutting the chicken breasts into small chunks.
